Ingredients1 medium red onion, sliced into rings
1/4 c. cider vinegar
salt to taste
dash Cayenne pepper
1 lb. small new potatoes or salt potatoes, quartered
1/4 c. sliced chilies
8-9 strips smoked bacon
6 large green onions, sliced
3 cloves garlic, minced
1/8 tsp. crushed thyme
Directions
Separate the onion rings; put in a bowl and pour vinegar, salt and cayenne pepper over. Let stand 1 hour or longer.
Cook potatoes in boiling water for 15 minutes, until tender. Drain and set aside...do not rinse.
Cook bacon in large skillet until crisp. Drain, crumble and set aside. Pour off all but 1 Tbsp. bacon fat. Cook green onions and garlic in bacon fat; add herbs and potatoes. Cook and stir until potatoes are warmed. Add chilies, onions in vinegar and crumbled bacon. Gently mix.
Serves 8-10.
